April Weeknight Meals
You are most likely finding yourself spending more time at home this month than you might have expected and that probably also includes more cooking and eating at home too. Some of us may have more time to cook, but a lot of us juggling work and kids at home may in fact have less. So, I hope our March edition encouraged you to fire up your grill a bit more -- grilling is often a great option for fast meals with little cleanup. Plus, it'll get you outside!
This month, I'm including one of the fastest seafood options that requires just a few minutes of cooking: scallops. If those don't strike your fancy, try a new take on a family favorite with a few pasta dishes that no one will even notice are also vegetarian. There's something to help everyone get weeknight meals on the table. And consider having kids help out too!

Friday - Slow Cooker BBQ Pulled Pork
Monday - Veracruz Style Fish Skillet
Tuesday - Slow Cooker Barbacoa -- this is an Instant Pot recipe, but has slow cooker details at the bottom of the recipe.
Wednesday - Sheet Pan Sausage with Veggies
Thursday - Baked Rigatoni with Spinach, Ricotta, and Fontina
Friday - Pork Chops and Couscous with Tomato-Caper Sauce
Monday - Slow Cooker Tacos Al Pastor
Tuesday - Chicken Shawarma Naan Salad with Sweet Potato Fries
Wednesday - 10-Minute Baked Salmon
Thursday - Apple Cranberry Turkey Meatballs
Friday - Easy Chorizo Hash
Monday - Seared Scallops with Salsa Verde
Tuesday - Cilantro Lime Flank Steak
Wednesday - Pasta with Charred Broccoli, Feta, and Lemon
Thursday - Hawaiian Pork Bowl
Friday - Sheet-Pan Chicken Meatballs + Charred Broccoli
Monday - Weeknight 20 Minute Spicy Udon Noodles
Tuesday - Beef + Ginger Stir Fry
Wednesday - Roasted Tomato, Salami, and Mozzarella Pasta
Thursday - Shrimp Scampi with Zucchini Noodles -- check your grocery store for pre-spiraled zucchini to save time or use regular pasta noodles if you like.
